Ingredients

1 cup water
¼ cup lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh mint, or more to taste

1 cup bulgur wheat
1 large tomato, diced
1 cucumber, diced
½ red onion, diced
1 cup finely chopped broccoli florets
½ cup dried cranberries

Directions

  1. Stir water, lemon juice, olive oil, mint, salt, and pepper together in a large container with a lid, add bulgur wheat, stir to coat, and soak in refrigerator until bulgur is soft, 3 hours to overnight.
