4 green onions, sliced

1 avocado - peeled, pitted, and diced
1 tablespoon fresh lime juice
¼ cup apple cider vinegar
2 tablespoons tequila
1 tablespoon chilled lime juice
salt and ground black pepper to taste
¼ cup extra-virgin olive oil

Directions

  1. Place the lettuce, onions, tomato, avocado, and 1 tablespoon lime juice in a large bowl, toss to coat.

  2. Whisk together the vinegar, tequila, 1 tablespoon lime juice, salt, and pepper in a small bowl, slowly stream in the olive oil while whisking, pour the mixture over the salad and toss to coat. Serve immediately.
