2 (29 ounce) cans sweet potatoes, drained
⅓ cup butter, cut into 1/4-inch pieces
¾ cup light brown sugar
1 (16 ounce) package miniature marshmallows

Directions

  1. Spray the inside of a slow cooker with cooking spray.

  2. Place sweet potatoes in a slow cooker and arrange butter on top of sweet potatoes. Sprinkle brown sugar over sweet potatoes.

  3. Cook on High, 3 to 3 1/2 hours. Add marshmallows and cook until soft and somewhat puffy, about 15 minutes.

Recipe Note

I came up with this one Thanksgiving because I was short on oven space. Everyone loved it and I have made it for every Thanksgiving and holiday meal ever since. Be careful not to overcook marshmallows, they can become liquified.
