2 ½ cooked, mashed sweet potatoes
1 ½ cups quinoa, cooked and cooled
¾ cup trail mix
1 large golden beet, grated
1 red beet, grated
½ cup whole wheat flour
½ cup whole wheat bread crumbs
⅓ cup olive oil
½ red onion, minced
5 tablespoons parsley, minced
3 tablespoons tamari
1 tablespoon sea salt
4 cloves garlic, minced
½ teaspoon red pepper flakes

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.

  2. Combine sweet potatoes, quinoa, trail mix, golden beet, red beet, flour, bread crumbs, oil, onion, parsley, tamari, sea salt, garlic, and red pepper flakes in a large bowl. Mix by hand until burger mix is thoroughly combined.

  3. Divide burger mix into 10 portions, press each one firmly into a patty. Place on the prepared baking sheet.

  4. Bake in the preheated oven until golden brown, about 20 minutes.
