2 (0.3 ounce) packages sugar-free orange gelatin mix (such as Jell-O®)
2 cups boiling water
1 (11 ounce) can mandarin oranges (no sugar added), drained with juice reserved
1 small orange, juiced
¼ cup sugar-free orange drink (such as Crystal Light Sunrise Classic Orange®)
¾ cup ice cubes, or as needed
1 cup frozen sugar-free whipped topping (such as Cool Whip®), thawed

Directions

  1. Dissolve orange gelatin mix in boiling water in a bowl. Stir juice from mandarin oranges, orange juice, and sugar-free orange drink into gelatin mixture. Melt enough ice cubes into the gelatin mixture so you have 1 1/2 cups total, refrigerate until thick and softly set, 6 to 8 hours.

  2. Stir mandarin oranges into gelatin and gently fold whipped topping into the dessert, refrigerate until fully set, about 2 more hours.
