Directions

  1. Heat a frying pan over medium-high heat.

  2. Combine almond flour, flax meal, baking soda, and salt in a bowl. Add ricotta cheese, egg, 1 teaspoon coconut oil, and vanilla extract. Mix thoroughly.

  3. Spread 1/2 teaspoon coconut oil in the pan. Pour a portion of the batter into the pan and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until bottom is light golden brown, 2 to 3 minutes. Repeat with remaining batter.
