½ cup finely chopped onion
2 tomatoes, chopped
1 (4 ounce) can chopped green chiles
½ teaspoon salt

Directions

  1. Melt butter in a skillet, cook and stir onion just until soft and translucent, about 3 minutes. Stir tomatoes, green chiles, and salt into onion mixture, reduce heat to low and simmer, uncovered, until liquid evaporates, about 10 minutes.

  2. Stir Cheddar cheese into green chile mixture, cook until melted, about 2 minutes. Serve immediately.
