10 ounces diced cooked ham
1 medium onion, chopped
1 (15.5 ounce) can low-sodium kidney beans, rinsed and drained
3 sprigs cilantro, chopped
½ cup sofrito sauce
1 tablespoon distilled white vinegar
1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice

Directions

  1. Heat oil in a large skillet over medium heat. Add ham and onion. Saute until ham is browned and onion is softened, about 5 minutes. Add beans, cilantro, sofrito, and vinegar. Cook 5 minutes.

  2. Stir in rice and water. Bring to a boil, reduce heat, and simmer, covered, until rice is tender, about 15 minutes. Garnish with additional cilantro if desired.
