1 small red bell pepper, chopped
½ onion, chopped

1 ½ cups fresh corn kernels
1 cup frozen Italian green beans
½ cup frozen sliced okra
½ cup frozen baby lima beans
½ cup halved cherry tomatoes
½ teaspoon dried basil
¼ teaspoon dried tarragon
salt and ground black pepper to taste

Directions

  1. Melt butter in a large skillet over medium heat. Saute bell peppers, onion, and garlic until softened, about 5 minutes. Stir in corn, green beans, okra, lima beans, and tomatoes. Season with basil, tarragon, salt, and pepper. Cook over medium-high heat, stirring to loosen any frozen vegetables, for 3 to 5 minutes.

  2. Reduce heat to medium-low and cook until vegetables are tender, about 20 minutes.
