12 ounces uncooked chorizo sausage
¼ cup diced onion
1 tablespoon chopped fresh cilantro leaves

3 Mexican squash, spiralized
1 teaspoon chopped garlic
½ teaspoon crushed red pepper flakes, or to taste

Directions

  1. Heat a skillet over medium-high heat. Crumble sausage into skillet, add the onions and cilantro. Cook and stir until evenly browned, 6 to 8 minutes. Add diced tomatoes and crushed red peppers to the chorizo mixture, stirring until heated throughout.

  2. Heat olive oil in a separate skillet over medium-high heat. Add squash noodles, cook and stir 2 minutes. Add garlic and cook 2 to 3 more minutes.

  3. Transfer squash noodles to plates and top with the chorizo mixture.
