Ingredients

¼ cup warm water
1 (.25 ounce) package active dry yeast
1 cup milk
5 tablespoons unsalted butter
½ cup white sugar
1 ½ teaspoons salt
¼ teaspoon ground cinnamon
2 cups mashed cooked sweet potatoes
1 teaspoon lemon juice
1 large egg, slightly beaten
2 cups all-purpose flour, or more as needed
2 tablespoons salted butter, melted

Directions

  1. Combine warm water and yeast in a measuring cup, stir to dissolve. Set aside.

  2. Heat milk, unsalted butter, sugar, salt, and cinnamon in a small saucepan over medium heat, stirring occasionally, until butter melts and milk begins to bubble.

  3. Place mashed sweet potatoes in a large mixing bowl and pour milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm, 10 to 15 minutes. Add egg and yeast mixture, blend well.

  4. Stir in 2 cups of flour and beat with an electric hand mixer at medium speed, about 3 minutes. Add enough additional flour to make a stiff dough. Turn onto a floured surface and knead until smooth and elastic.

  5. Place dough in a buttered bowl. Turn dough to butter top, then cover and let rise until double in size, 45 minutes to 1 hour.

  6. Punch down and knead once more, then shape into rolls. Place on a greased baking sheet, cover, and let rise until double in size, 45 minutes to 1 hour.

  7. Preheat the oven to 400 degrees F (200 degrees C).

  8. Bake in the preheated oven until golden, about 20 minutes. Brush tops with melted butter while hot.
