1 clove garlic

2 tablespoons red wine vinegar
2 tablespoons mayonnaise
½ teaspoon dried oregano

Directions

  1. Mash garlic with a bit of salt using a mortar and pestle, transfer to a bowl. Add vinegar, mayonnaise, and oregano to garlic, whisk.

  2. Slowly pour olive oil into the bowl while vigorously whisking the oil into the vinegar mixture to incorporate, season with salt and pepper.
