1 teaspoon baking soda

½ teaspoon ground cinnamon

1 dash salt
½ cup coconut oil, or more as needed
½ cup yacon syrup
¼ cup yacon syrup
2 ½ tablespoons melted dark chocolate (85% cacao)

Directions

  1. Preheat the oven to 340 degrees F (170 degrees C). Line a baking sheet with parchment paper.

  2. Combine flour, baking soda, ginger, cinnamon, nutmeg, and salt in a large bowl. Combine coconut oil and yacon syrup in a separate bowl. Add oil mixture to dry ingredients and mix until dough forms.

  3. Roll dough out to about 1/2-inch thickness. Use Halloween-themed cookie cutters to cut out cookies, place them on the prepared baking sheet.

  4. Bake in the preheated oven for 10 minutes.

  5. While cookies bake, combine yacon syrup and melted chocolate.

  6. Remove cookies from oven and apply icing while still hot.
