4 ears corn on the cob, shucked
1 tablespoon peanut oil, or as needed
Salt to taste
3 tablespoons fresh mayonnaise
4 teaspoons guajillo chile powder
1 lime
1 cup crumbled cotija cheese

Directions

  1. Rub corn with oil and season with salt.

  2. Cook corn over an open fire grill or wood oven for 8 to 10 minutes.

  3. Remove from grill and rub with the mayonnaise, season with guajillo powder (molido). Place corn back on grill or oven for 2 minutes.

  4. Remove from heat, squeeze lime juice over corn then top with cojita cheese. Serve immediately.
