1 (16 ounce) package frozen chopped spinach, thawed and drained
1 cup finely chopped onion, or more to taste
5 tablespoons olive oil
1 teaspoon olive oil
2 large eggs, beaten
1 (16 ounce) package frozen kale, thawed and drained
1 cup dry seasoned bread crumbs
¼ cup grated Parmesan cheese, or more to taste
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon ground thyme
½ teaspoon dried rubbed sage
½ teaspoon dried rosemary
½ teaspoon dried oregano
2 pinches ground black pepper

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray or line with parchment paper.

  2. Combine spinach, onion, 5 tablespoons plus 1 teaspoon olive oil, and eggs together in a large bowl. Add kale, bread crumbs, Parmesan cheese, sea salt, garlic powder, thyme, sage, rosemary, oregano, and black pepper, mix thoroughly using your hands.

  3. Form mixture into 1 1/2-inch balls and arrange on the prepared baking sheet.

  4. Bake in the preheated oven for 15 minutes, flip and continue baking until lightly browned, 10 to 20 more minutes.
